So yesterday, my dad decided to cook out, but since it was a fast day for me (meatless for religious reasons) I decided to make a vegetarian chili that the rest of my family could enjoy as a side as well, and I wanted to put quinoa in it. Well, when I cooked the quinoa, I forgot to take into account the fact that a cup of uncooked quinoa yields more than just a cup of cooked quinoa, so long story short: I’m going to be eating a lot quinoa for the next couple of days. Here it is with some leftover sweet and spicy chicken and veggies from earlier this week.
